Is anyone else drowning in Tuna? I took advantage of the Tuna at Albertsons (more on how I did it, later this week) and now have a year supply for my family. It's not an impressive year supply, as there are only 4 of us, and we are not big Tuna eaters... But my goal is to find some recipes that even my Tuna Hatin' Husband will eat! This Casserole will be my first try:Tuna Casserole
INGREDIENTS
- 1 (12 ounce) package egg noodles
- 1/4 cup chopped onion
- 2 cups shredded Cheddar cheese
- 1 cup frozen green peas
- 2 (6 ounce) cans tuna, drained
- 2 (10.75 ounce) cans condensed cream of mushroom soup
- 1/2 (4.5 ounce) can sliced mushrooms
- 1 cup crushed potato chips
DIRECTIONS
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
- Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.
TUNA MELT

INGREDIENTS
- 2 (6 ounce) cans solid white tuna in water, drained
- 1/4 cup mayonnaise
- 1/4 cup finely chopped celery
- 1 1/2 tablespoons finely chopped onion
- 1 tablespoon chopped parsley
- 3/4 teaspoon red wine vinegar
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 4 slices seedless rye bread
- 8 slices ripe tomato
- 8 slices Swiss cheese
- paprika, for garnish
DIRECTIONS
- Preheat the oven broiler.
- In a bowl, mix the tuna, mayonnaise, celery, onion, parsley, and vinegar. Season with salt and pepper.
- Place the rye bread slices on a baking sheet, and broil 1 minute in the preheated oven, until lightly toasted. Remove from heat, and spread with the tuna salad. Place 1 cheese slice over the tuna salad on each piece of bread, layer with a tomato slice, and top with remaining cheese slices.
- Return layered bread to the preheated oven, and broil 3 to 5 minutes, until cheese is melted.

If you’re having your in-laws over and you’re trying to impress your “the woman you’ll never live up to” mother-in-law, you should probably go with something like Seared Ahi Tuna on a bed of mixed greens with Wasabi Vinigarette.
If it’s 5:30 and you’ve got to be to a meeting at 7:00 and you’ve got mouths to feed. This is one of my quickest tried and true recipes. It’s a crowd pleaser at my house full of too-good-for tuna snobs:
CREAMED TUNA ON BISCUITS
Sauce
In a saucepan melt 4 T butter. Whisk in 6 T flour and ¾ t salt until smooth. Add 3 c milk. Stir and cook over medium heat until mixture thickens and bubbles. Add one pouch of tuna.
Buttermilk Biscuits {homemade- but still quick and easy!}
2 C. Flour
3 tsp baking powder
½ tsp salt
¼ tsp soda
5 T shortening
1 C. Buttermilk
Mix dry ingredients, cut in shortening, add buttermilk. Use cookie cutter or an upside down table glass to cut into biscuits. Bake at 450 degrees for 10-12 minutes. Yield: 12 biscuits.

We like an easy casserole recipe, that changes it up a little, because it is tomato based.
2 cans tomato soup
2 cups cooked rice
2 cans of tuna
Mix it all together and top it with Cheddar cheese.
It is really easy and we like it a lot.
(we also mix it up with brown rice and add spinach to make it a little healthier)
