You would just get $1 back. You want to do as many transactions of TWO as possible! I just did this today. Be sure not to get the "Shells & Rotini" though... it's only the "Shells and Cheese", regular and the lower fat version.

question about the rebate.
does the $25 have to be before coupons Like if I got $25 worth of products then had $10 off in coupons. Would I still get the catalina and the rebate?
Or does the total of $25 include coupon savings were I have to get the total to be $25 with coupons? Just want to make sure I do this right.

I did this deal this morning and got 28 cups of shells and cheese for $1 oop (and I have $1 OYNO in my stash from that now :) ). I went to 3 different albertsons here so I wouldn't feel bad about buying all the cups at one store. There were only 8 at one store though (Milton, WA), so I cleared them out :)
