BANANA RAISIN SCONES
Ingredients
1/2 cup raisins
2 Tbsp. hot water
2-1/2 cups flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
6 Tbsp. cold butter or margarine
1-1/2 cups Post Selects Banana Nut Crunch Cereal
1 egg
1 container (6 oz.) vanilla low-fat yogurt
Directions
PREHEAT oven to 425°F. Mix raisins and water in small bowl; set aside. Mix flour, sugar, baking powder and baking soda in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in cereal. Beat egg in small bowl; stir in yogurt and raisins and their liquid. Add to flour mixture; stir until mixture forms soft dough. DROP dough by 1/4 cupfuls, 2 inches apart, onto greased baking sheets. BAKE 10 min. or until lightly browned. Serve warm.


CRUNCHY STUFFED FRENCH TOAST
Ingredients
3 eggs
1 cup fat-free milk
1-1/2 tsp. sugar
1/2 tsp. vanilla
1/4 tsp. salt
2 cups Post Selects Banana Nut Crunch Cereal
8 slices challah bread,
1/2 inch thick 2 oz. bittersweet baking chocolate,
finely chopped 1 large banana,
sliced 2 cups sliced strawberries
Directions
PREHEAT oven to 350°F. BEAT eggs, milk, sugar, vanilla and salt in large shallow dish with wire whisk until well blended; set aside. Place cereal in resealable plastic bag; seal bag. Crush cereal with rolling pin. Dip both sides of the bread slices in egg mixture; place on clean work surface. Sprinkle evenly with chocolate; top with bananas. Dip both sides of remaining 4 bread slices in remaining egg mixture; place over bananas to make four sandwiches. Press together gently. Coat both sides of sandwiches with cereal crumbs; press crumbs firmly into sandwiches to secure. PLACE on baking sheet. BAKE 20 to 25 min. or until lightly browned. Cut diagonally in half. Serve with the strawberries.


BANANA SNACK BARS
Ingredients
1 pkg. (15.5 oz.) Post Selects Banana Nut Crunch Cereal 1/2 cup flour
2/3 cup honey
6 Tbsp. butter
Directions
PREHEAT oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan; lightly grease foil. Set aside. Mix cereal and flour in large bowl; set aside. PLACE honey and butter in small saucepan. Bring to boil over medium-high heat, stirring constantly. Pour over cereal mixture; mix until evenly coated. Press firmly into prepared pan. BAKE 12 to 15 min. or lightly browned. Cool. Remove dessert from pan, using foil handles. Cut dessert into 32 bars. Store in tightly covered container at room temperature.

Do you think you could substitute any flavor for the banana selects? I only got the cranberry crunch - I'm thinking the scones would be good, minus the raisins ;-)

I don't know if it's nation wide. Sorry! I only know it is working at Albertsons, but it likely could be elsewhere too.

I tried the "banana snack bars" with the cranberry cereal. Didn't like it very much. Don't think I'd like it with any cereal. Way too sweet (this coming from a total sugar addict!) I say if you want to try the scones with the cranberry cereal, go for it. You'll only know if you like it if you try it.

For the Post Promo going on right now I have a question.
Does the catalina for the post cereal continue past Tuesday, Aug 18th? If so, can you still get the cereal promo (save $4 instantly) and the catalina if you are getting a special order of post cereal but won't be in until after the 18th?

Thanks Lynn - I may still try the snack bars. I'm a sugar addict as well - maybe I'll do half a batch or put less honey in them. I will try the scones too - I love to bake and this gives me an excuse.

so, I'm a recipe junkie/foodie - I posted a similar recipe on the kids lunch idea's thread - but here's a soup I made yesterday with my Ragu pasta sauce if anyone wants to try.

1 small onion, chopped
1 carrot, chopped
2 cups chopped baby spinach
2 cloves garlic, minced
6 cups broth (I used water/knorr veggie boullion cubes)
2 cups Ragu (I used the roasted garlic/onion flavor)
1 cup broken spaghetti noodles
1 can garbonzo beans, drained and rinsed
dried oregano and dried basil (I used about a tsp or so of each)

sautee onion and carrot for about 10 min in some olive oil (I used 1.5 T), add garlic and seasonings (I also added a couple shakes of Mrs. Dash extra spicy seasoning), sautee another min or so, add broth, spaghetti sauce and beans, bring to a boil and add spaghetti noodles, cook till spaghetti is done (10 min or so on soft boil), lower heat and add spinach.

You can adjust this with whatever veggies you want, this is just what I had in my fridge. Zuchinni would be good (add with garlic) and fresh basil would be good (add with spinach). I also put some fresh ground black pepper in at the end.
